'Old school'...in a good way!

You could say that we’re ‘old school’ butchers, in the way that we respect our producers and know our craft. Our beef, lamb, free range pork and poultry is all of the highest quality and is produced locally by farmers we know and trust. We shoot our own venison on local estates and prepare it ourselves, so we are absolutely sure of its provenance. We make all our own sausages using natural casings, fresh herbs and spices. Our pies, pasties, scotch eggs, sausage rolls, etc are freshly baked in our shop each day, and our pâtés and terrines are made in-house to our own recipes. Our gammons, hams and dry cured bacon are all hand sliced.

You could say that we’re ‘old school’ when it comes to service too. We value our place in our community. Our knowledgeable team takes great pride in offering traditional — sometimes forgotten — levels of service, helping customers to choose the right joints and cuts and suggesting the best cooking methods, or perhaps sharing a recipe or two.

Bringing tradition right up to date

But there’s nothing ‘old school’ about our passion and inventiveness when it comes to enjoying our products. We love helping our customers explore and discover lesser-known cuts, different flavours and ways of cooking. And because we work with whole carcasses we can offer bespoke preparation and very specific butchery techniques, such as seam butchery. So if you want a piece of meat preparing in a particular way, we’re happy to do it. If you’d like a particular stuffing or marinade, just let us know. Bring us in a recipe you’re planning to try and we’ll advise on what you need. If you haven’t tried venison or other game before, we can guide you on how to cook it. Planning a dinner party or a barbecue? We’ll help with suggestions. And we love to hear back how much you enjoyed it all!
